A Delicious Tuesday
I skipped my morning workout today in lieu of more sleep. I decided that since I just completed my last half marathon of the season and I don’t have any upcoming races, I am going to give myself a break this week. I’ll probably workout tomorrow and I would like to do some bikram yoga later in the week, but I’m not putting the mental pressure on myself to make sure a sweat session happens. If it does, great! If not, I’ll be back on my exercise routine next week. I think my body deserves the break (both mentally and physically) and my schedule deserves some flexibility after training for 3 half marathons. I would like to take this week to think about some new fitness goals I want to set for the next few months. I’m thinking of maybe signing up for a triathlon? Or possibly committing to doing bikram yoga 3 days a week? We’ll see! Your suggestions are always welcome, friends!
Since I don’t have any exercise stories or workouts to share with you, I wanted to highlight some good eats that happened today. This was an awfully delicious Tuesday.
Today’s work day flew by thanks to a ton of projects and I ended up having to eat lunch while I worked, but lunch today was worth mentioning.
Last night I cooked some quinoa to ensure I had a healthy lunch today. I knew if I didn’t bring a healthy meal, I would end up eating whatever fast food was delivered to the office. I cooked a 1/2 cup of quinoa and then drizzled it with some olive oil and fresh lemon juice before tossing in some feta cheese, goat cheese, sun-dried tomatoes and spinach. I threw it in the fridge and then heated it up in the microwave today and it was so incredibly good! I ate it alongside an apple and some crackers and it kept me full until dinner.
Dinner was also worth mentioning.
That would be thai turkey burgers topped with thai cole slaw. I’ve been on a thai cole slaw kick lately. I seriously put it on everything. Tacos. Pizza. Enchiladas. Burgers. A fork. All I do is buy a bag of cole slaw in the produce section of my grocery store and then cook it in a pan over medium heat with the following ingredients:
- Sweet Thai Chili Sauce
- Light Coconut Milk
- Soy Sauce
- Peanut Butter
- Peanuts
I don’t measure anything because I despise doing dishes. If you want an actual recipe for this though, I’m happy to make it again and measure ingredients. Just e-mail me or leave a comment in this post. I know some people love to measure to make sure they get it right…I’m just lazy. Actually, Dave usually does the dishes. I don’t even have to wash the measuring tools. I’m actually too lazy to even pull them out of the drawer. For those who know me, this shouldn’t come as a shock. I rode in a stoller until I was 8. I wish I could say I was kidding. I’m the person that will run 13 miles and then circle around the parking lot at work for 15 minutes waiting to get the closest spot because God forbid I walk 1 block.
Perhaps the biggest highlight of today was paying off my credit card. I’m officially debt free! I recently wrote about my goal of living with intention, and one of the derivatives of that was to get out of debt and save money this year. I have been actively trying to pay off the 1 and only credit card I possess for a year and today I finally did it. I got that sucker down to a zero balance! HOLLA!
Now, I just have to save money to get my savings account where I want it…which is easier said than done. Seriously. Have you seen these? And this is calling my name. And my guest room needs this. The bed is lonely – it needs company. BUT! I’m staying strong and saving money so I can accomplish bigger goals this year! I’m very excited about starting 2013 debt free and I’m hoping I can fully utilize this opportunity to catapult my life to where I want to be at the end of the year!
I celebrated this mini milestone after work with Mr. Bubble.
Every day should end with Mr. Bubble. And thai cole slaw.

Debt free, good for you, girl!! That’s amazing
And totally worthy of a bubble bath. The best thing I ate today was frozen yogurt and gummi bears!

Oh – I love frozen yogurt with gummie bears (& sprinkles of course)! Have you ever tried chocolate covered gummie bears? They sound gross, but they are actually really good!

Good job on being debt free. It truely does make you free in so many ways. My best meal was a protien snack pack from starbucks. Oh yeah, I washed it down with a mocha frapp. There’s always tomorrow.
You’re hilarious, Mom. A Mocha Frapp sounds like a good choice and those protein snacks are delicious.

I’m so incredibly happy for you, debt free is a great way to start the new year!!! To help in my effort of retiring early I have work split my paychecks between my checking and savings account. It helps because I have learned to live off of a subset of my pay! If you have any free time you should read “how to be richer, smarter, and better looking than your parents” it’s an awesome book!!!

My favorite go to dinner….Turkey Italian Sausage cooked in a skillet with a green pepper, a red pepper, onion, tomato and lots of spinach. So healthy, so good and SO easy! Literally, from the very beginning to in my bowl ready to eat, maybe, MAYBE, half an hour. Veggies can be roughly chopped, so that’s easy, and the spinach goes in towards the end just to wilt. Yum yum yum! Now I’m excited for lunch because it’s all about leftovers toady!
