Easy Breezy Crock Pot Chicken

Chances are you won’t find a lot of meat recipes in the land of C n’ C. While I am not a self-proclaimed vegetarian, cooking poultry and other meat dishes gives me the heebie jeebies (←technical term) so I tend to stick with a plant based diet. I can almost promise I’ll never snap a photo of raw chicken and post it up on the blog because raw chicken grosses me out. However, I feel as though I would be doing you a disservice if I didn’t share this crock pot chicken recipe because the possibilities are endless. You can use this recipe to make thai chicken enchiladas…

You can add taco seasoning, and use the chicken to make tacos. You can add BBQ sauce and make a BBQ chicken pizza . Or you can swap out the chicken for pork and make BBQ pulled pork sandwiches. OR you could add buffalo sauce & make a buffalo chicken grilled cheese sandwich…

Or you could make chicken salad. Or, you could just shred it and eat it with a fork if you’re into that sort of thing. There are about a bajillion (←technical term) things you can do with this chicken and not only is it moist and delicious, but it is also incredibly easy to make!

Easy Breezy Crock Pot Chicken 


  • Boneless skinless chicken breasts (I usually use 3 pieces of chicken)
  • Chicken broth (I typically use Swanson Organic Broth)
  • Seasonings of your choice (salt, pepper, taco seasoning, seasoned salt, garlic powder etc)


Grease a large crock pot. Place chicken in crock pot and season with salt and pepper and any additional seasonings you prefer. Pour enough chicken broth in the crock pot to barely cover the meat. The meat should not be ‘floating’ in chicken broth, but it should be slightly covered.

Cook on low for 8 hours.

Remove chicken from crock pot. Shred chicken using 2 forks. Add in any sauces you wish (BBQ, Buffalo, etc), get creative with it and serve! Easy breezy lemon squeezy!
