Surprises & Stuffed Peppers

Let me start this post by saying I am so excited to make a new playlist for the Zooma half marathon after listening to all the great songs you guys suggested! You all are obviously way cooler than me and I appreciate you bringing me up to speed on some good running music. I can’t wait to jam out during the race to some new tunes! Thank you!

Rockstar Vizsla

After a 5 mile run this morning and a crazy busy workday it was time to exhale and head home at 5 o’clock. I’m working on a few projects this week that have me a little stressed out. Dave knows I am trying to just make it through this work week alive, so he had a sweet little surprise waiting for me when I got home today.

Welcome Home SurpriseThat would be a glass of white wine, a welcome home note and a smiley face made out of cookies. He stuffed a mini reese’s in between 2 Famous Amos cookies for the eyes and used animal crackers for the mouth and nose. I put the ‘eyes’ in the microwave and gobbled them up after they were warm and melty. It was sinful. But if lovin’ a cookie smiley face is wrong, then I don’t want to be right. Ever.

I poured the wine in a red solo cup like the classy lady I am and drank it while we took the dogs for a 1.5 mile walk. It was a small surprise, but it made me smile and more importantly – it helped me forget about the stresses of work and enjoy my evening!

Obviously, my afternoon snack wasn’t the healthiest so I had to make up for it with a healthy dinner. I made stuffed peppers, which Dave originally declared he didn’t like. FYI: He’s eating his 3rd stuffed pepper of the night right now.

Stuffed Pepper

I got the idea from Pinterest (where all good ideas come from) and it was a win-nah! I changed the recipe up slightly by adding more veggies and omitting some things like cilantro, but you can see the original recipe here. The above pepper is topped with melted cheese and reduced fat sour cream.

It was a little bit involved for a weeknight meal (I’m lazy, so take that into consideration), but totally worth it. It was full of flavor and I think it will make for great leftovers…assuming Dave doesn’t eat all of them tonight. He just told me how much he loves stuffed peppers. My, how quickly things can change.

Now, you tell me:

What made you smile today?

What’s the best recipe you’ve found on Pinterest! Please share the love!Β

    • Too funny, Michelle! I have that recipe pinned and I have made it several times! You’re right – it is delicious!

We should start a countdown for when you can have wine again! πŸ˜‰

  1. How nice to come home to such a sweet, and delicious, surprise! I love that you poured the wine into a solo cup, that is so my style! Dan and I are currently watching last night’s episode of the Bachelor with Nola snuggled in between us. How could that not make you smile!? πŸ™‚

    • Just the thought of Nola puts a smile on my face! πŸ™‚

  2. Those peppers look yummy and that cookie face looks to die for. I got stuck staying later than planend at work so I headed to the random convenience store inside of my building and spent $0.40 on a few single pieces of dark chocolate minis, mmm. – I am sort of jealous that your dog can run forever with you (this is coming from your about me page!) I have a 16.5 week old german shepard and can’t run her yet but have been told that I won’t ever be able to really lug her around, it is wayyyy to hot in DC. So sad. Anywho! Found you your blog today, am a happy camper, and adding you to my reader! Night!

    • Thanks for dropping by, Megan! I’m lucky to have a great running partner like Ob, but on the flip side she goes crazy when we don’t run for a few days because her energy level is out of control! German Shepards are great dogs – they are a little bit lower key than Vizslas, which I’m sure you’ll appreciate during rainy/snowy weeks when you can’t get in a lot of outdoor activity!

Looking forward to reading your blog! πŸ™‚

  3. I literally just said “awee” outloud while sitting here at Caribou Coffee & a few people just looked at me as if I were crazy. Dave is too sweet =)

    • He is a doll, Jessie! I’m lucky to have him. πŸ™‚

    • Can I get an ‘Amen” – haha!

    • Just re-pinned it! Dave loves chicken salad, so I’ll be making this for him pronto! Thanks for sharing! πŸ™‚

  4. That is insanely sweet.
I love his choice of words (“My love”–swoon) and of snack. Cookie platter? yes, please!

Making me smile: My 7 year old found a stack of pictures of her dad at 21. Called him a “total hottie” and packed them in her backpack to show off to her friends.

Best recipe–too close to call. That site is dangerous.

    • Isn’t he so sweet, Amy? I love that man to pieces!

And that is the cutest thing I’ve ever heard. I bet that made her dad’s day! She sounds like a doll!

    • Jessica – I am cracking up at the vibrating fork! I’ve got to google that! Hilarious!

      And you’re right – Dave is a keeper. πŸ™‚
