This Week’s Dinner Menu

Hi, guys! I’m in the process of trying to compile a few posts detailing toddler meals (aka what Atlas eats) and more baby food recipes (aka what Andi eats). I’m thinking I’ll have the toddler meals segmented into 3 or 4 posts.

  • Breakfast
  • Lunch
  • Dinner
  • Snacks

Atlas pretty much eats whatever we are eating these days, but I’m trying to include some of the meals that I know are his favorite. I’m also trying to snap photos of some of our go-to meals to feature with each post, but I am so not a good food photographer, so I apologize in advance if the pictures are no good…or non-existent. It is hard to snap a decent photo of food with 2 hungry babies waiting to eat! ha!

So, be on the lookout for all that in the coming weeks. But, today I thought I would just briefly share with you what our dinner menu is this week. I have always planned all our meals out for the week in an effort to streamline our dinner production and ensure healthy(ish) meals are consumed. It works well for us.

  • Sunday: Chicken Noodle Soup
  • Monday: Honey-Lime Tilapia and Roasted Acorn Squash
  • Tuesday: Tacos (21 Day Fix Recipe)
  • Wednesday: Steak Fajitas (21 Day Fix Recipe)
  • Thursday: Maple Glazed Salmon, Quinoa & Broccoli
  • Friday: Beef Stew (21 Day Fix Recipe)
  • Saturday: Dine Out or Order Pizza

Our weekly dinner menu is always changing, but I usually strive for fish 1-2 nights, 1 vegetarian night, 1 night of chicken (Dave loves chicken) and the other nights are typically reserved for trying a new recipe or an oldie’ but a goodie that the whole family loves. This week I’m trying a few new recipes from the Fixate cookbook.

My intense love for ice-cream died during my pregnancy with Andi (weird and sad, I know), but it has recently been resurrected. I grabbed this Edy’s Frozen Custard on a whim at the grocery store last week and let’s just say I made up for lost time. I devoured it and it took all my willpower not to buy it again this week. After consuming that whole thing by myself, I was ready to bust out the new Fixate cookbook I recently got and eat cleaner this week. Balance, right?
